Poker Stars is one of the 'Big Two' (the other being Full Tilt) poker rooms and as such has great traffic so games can always be played. The site offers a good range of SNGs and has it's unique offering the '50/50' (which recently replaced the Double or Nothing).
Multi-tabling support is good allowing up to 24 sit n gos to be played at one time.
Stars doesn't offer rakeback anywhere - however this is offset by the fact that their points/reward system is second to none. Customer support is very good too.
Since Full Tilt having it's gaming license suspended, traffic to Poker Stars has significantly increased which means tables are filling up far more quickly.

Titan Poker offers a superb first deposit bonus of 200% (up to $1000). A variety of sit n gos are offered with a good range of buy-ins. Some ultra-micro SNGs are available as low as $0.24 buyins which make the site a great way of learning SNGs if you're new to the game,

After 'Black Friday' of poker in May 2011, USA based players can no longer play on Full Tilt and PokerStars. This has meant thousands of online poker players looking for an alternative poker site to play on. Many of these USA sit n go (SNG)players have moved to Carbon, so its traffic has increased significantly. (For an up to date snapshot of player traffic across the online poker sites, have a look at the poker traffic live report).
Rakeback on Carbon can be found up to a generous 35% making it an attractive proposition for USA sit n go poker players coming from Full Tilt (where they'd have been used to a rakeback amount of 27%).
I do like the software - I think the interface is a very 'clean' design, and there is also a 'mini mode' which is great if you're wanting to increase available on your screen. Check out the screenshots below to get an idea.
Sit N Go buyins range from $0.11 to $5580. Their full-ring SNG games are 10 player rather than 9 and are at a range of speeds including Superturbo. If you really want to take shove/fold to the limit they offer an 'all in or fold' game which frankly seems daft but might be enjoyable to the inebriated player :)
If you're an ex-PokerStars player who misses the popular DoNs (Double Or Nothings), Carbon Poker offers these.
Traffic is likely to increase further in the wake of 'Black Friday'. For poker players new to the site, Carbon Poker offers a generous 100% first time deposit bonus up to $600.
For the USA SNG players, you can deposit to Carbon poker using credit cards (Visa or Mastercard) or via Click2Pay. Non-USA sit n go players will have more options including MoneyBookers.

Party Poker is one of the largest online poker sites (at time of writing it was #2 traffic-wise, since Full Tilt's licence suspension). The user interface for their poker client is clean and renders well even when at its smallest size, making multi-tabling easier.
Deposit options: Visa, Visa Electron, Maestro, Solo, Mastercard, PayPal, Moneybookers, UCash, paysafecard, EntroPay, Western Union, UseMyFunds, Click2Pay, myCitadelWallet, ClickAndBuy, instant bank transfer, bank wire transfer, bank transfer

Cake Poker is one ot the few poker rooms that are 'USA Friendly' since Poker 'Black Friday'. Many US grinders have now moved to Carbon or Cake.
Cake offers 10=player SNGS (rather than the usual 9 for full ring games) and therefore 30-player, etc.
Traffic isn't so great but this may increase as more USA poker players look for alternatives to Tilt and Stars
